Blueberry Lemon Waffles
1 Eggs
150g Flour
1/2 Tsp Baking Powder
1 Tbsp Sugar
A pink of Salt
1/4 Tsp Vanilla Powder
Lemon Zest
200 mL Milk
60g melted Butter
30mL Cold Water
A handful of blueberries
To serve berries and powdered sugar
Separate egg yolks from egg whites and put in two different bowls. Mix together flour, baking powder, sugar, salt, vanilla, and lemon zest.
Add 3/4 of the milk, melted butter and egg yolks and stir until smooth.
Add the rest of the milk and the water.
Whip egg whites until stiff peaks form then carefully fold them into the batter.
Bake in a hot waffle iron, throw in some blueberries in each waffle for a few minutes or until golden brown serve with extra berries and powdered sugar.
