Chef Mon Coeur / Christmas Muffins

Chocolate, Coffee and Baileys Muffins

1 Cup Flour
1 1/2 Cup Cocoa Powder
2 Tablespoons of Baileys
1/2 Cup Brown Sugar
4 Tablespoons of Coffee
1 1/2 Teaspoons Baking Soda
1 1/2 Teaspoon Salt
2 Eggs
1 Cup Milk
1/2 Cup Vegetable Oil
2 Teaspoons Vanilla Extract
1 Cup Boiling Water


1. Preheat oven to 180 degrees. Grease two round molds of 23cm each.
2. In a medium bowl mix the sugar, flour, cocoa powder, baking soda, salt and coffee. Add milk, eggs, oil, vanilla extract and Baileys. Beat for 3 minutes with electric mixer. Stir in bowling water and mix with a spatula. Pour the mixture of equal mounts in both molds
3. Bake for 30-35 minutes. To check if its ready insert a toothpick and if it comes out cleans its ready! Let it cool for 10 minutes before unmolding. 

If you want to get creative or want these for presents, make tags with the initials of your friends names and tie them with a cute ribbon.
