Chef Mon Coeur / More Starters

Wanton ricotta tortellini 
with chives and sesame chicken with cream cheese beer pate


1/2 Pound Ricotta
5 Tablespoons chopped Chives
1/2 Cup Chicken Breast cut into small pieces
1 Tablespoon Sesame Oil
White Sesame
1 Tablespoon Ginger
Salt & Pepper


5 Square sheets Wanton
Vegetable Oil
Black Sesame

Beer Pate:

2 Tablespoons Cream Cheese
3 Garlics
1 Tablespoon Butter
4 Tablespoons of Beer
1/2 Teaspoon of Oregano


Take the chicken and ricotta and mix well. 
Add a spoon in the middle of the Wanton pasta and brush the corners with egg to start creating the wantons. Start by creating a triangle, then bring one end to the other end to create a tortellini. Then we cook in a pan with vegetable oil until it comes to  a boil. 

Beer Pate:

In a skillet put a whole a garlic with butter and oregano. Mix well and add a pinch of salt. Finally we add the beer and let it reduce, then we take it away from the fire and we process it. 
Introduce the cream cheese and mix well. Let it cool for a few minutes.
